How to Make Basic Muffins

Introduction
Muffins
are a snap to make. Use this basic whole-wheat muffin recipe as a
starting point for your own creations: add fresh or dried fruits,
spices, nuts ... whatever you've got on hand. Makes about 12 muffins.

Things You'll Need
3/4 tsp. salt
3/4 c. milk
1 beaten eggs
1/2 c. flour
1/3 c. cooking oil
1/3 c. honey
2 1/2 tsp. baking powders
1 c. whole-wheat flours
1 c. all-purpose flour
Steps
1Step OnePreheat oven to 400 degrees F.

3Step Three Click to enlargeIn another bowl, beat egg, milk, oil and honey.
4Step Four Click to enlargeAdd wet mixture to dry mixture, and mix just to blend. The mixture will be lumpy.

6Step SixBake muffins for 20 to 25 minutes.
Tips & Warnings
Possible
additions include golden or black raisins; dried cranberries, dates, or
apricots; nuts; lemon or orange zest; vanilla or other extracts; sweet
spices, such as cinnamon, ginger, nutmeg, cloves and allspice. Fold in
fruits and nuts after you've mixed the dry and wet ingredients; add
spices and flavorings with the dry or wet ingredients.
You can
also experiment with different flours (cornmeal, bran), sweeteners
(brown sugar, molasses, white sugar) and liquids (buttermilk or
yogurt).
Freeze leftover muffins and reheat in the microwave for a quick breakfast.
Try
white flour muffins with dried cranberries, golden raisins, orange zest
and white sugar; consider chopped dried apples with cinnamon, nutmeg,
cloves and brown sugar.
